why do I get a bitter flavor

Can you give me some tips why do I get a bitter flavor on smoked meats?

The bitter flavor is caused by meat and marinade sauce that was burned during the smoking process. So you have to be care*l about overcooking the meat or putting it directly into the fire. You can avoid this by making sure that you have the right temperature that you have to maintain all throughout the process.

I’m not quite sure why it tasted that way. But maybe you‘ve overcooked the meat and a part of it was burned. To make sure that you have properly smoked the meat, see to it that you have the right temperature. You can use a cooking thermometer to see if the heat has reached 300 degrees. Maintain the temperature throughout the smoking process but make sure that you won’t overcook it.
